Cattle Breeds

Dairy farming has been part of agriculture for thousands of years. Every breed has a different set of characteristics, but they could be grouped roughly into two categories - beef cattle and dairy cattle.

The dairy cows are bred to be highly productive in milk. They tend to be leaner in the hips and shoulders, and have less desirable cuts of meat when butchered. The Beef cattle breeds are stocky because their energy goes toward building muscle and storing fat. This makes for tasty meat — lean meat with marbling for texture and flavor.
